Zucchini needs to be planted 1 per two squares since it grows quite large when you are growing it vertically. If you are going to grow it horizontally as a bush you will need a space of 3'x3' in one of your boxes.
Zucchini wants to be a bush and so to grow it vertically, you really need to be diligent and carefully train it to go up a trellis. When you look at a zucchini plant, you will see that the big leaves all come out of a main stem - almost like a vine. If you put a stake in the ground close to where this stem is located, you can train the zucchini to grow vertically. You would do this by carefully lifting and tying the main stem to the stake as the plant grows. This will take up less room than letting it bush out.
